Rechta – ريشتا

Rechta (ريشتا) is a typical pasta shape of the Eastern Maghreb (Algeria and Tunisia) and is the symbolic dish of Algerian cuisine. This very fine and thin shape, reminiscent of Italian tagliolini, is made from a mixture of fine semolina, salt, and water.

Rechta is typically served in large dishes with a meat and vegetable sauce seasoned with a variety of spices, but it can also be prepared as a dessert. This pasta shape is often served during special occasions such as weddings, Eid al Fitr (end of Ramadan) and Ashura.

Pasta dies with Teflon inserts are used to create the Rechta.

We produce both pasta dies (pastilles rechta) and single inserts, for small quantities or large batches.

The most requested sizes for this pasta shape are 1.5×0.5 mm and 1.2×0.5 mm, respectively N. 41 and N. 42 in our Trafile Turconi catalog.
